Leek and potato soup

Try our delicious leek and potato soup!


  • 1 knob of butter

  • 1 large leek, chopped

  • 4 medium potatoes, peeled and diced

  • 900ml of vegetable stock

  • Single cream

  • Salt and pepper


  1. Heat the butter in a pan.

  2. Add the leeks, cook for 5 minutes.

  3. Add the potatoes and cook until soft.

  4. Pour in the stock and bring to the boil, then simmer for 10 to 15 mins.

  5. Blend the soup and add salt and pepper.

  6. Add a spoon of single cream to each bowl.
