Leek and potato soup
Try our delicious leek and potato soup!
- 1 knob of butter
- 1 large leek, chopped
- 4 medium potatoes, peeled and diced
- 900ml of vegetable stock
- Single cream
- Salt and pepper
- Heat the butter in a pan.
- Add the leeks, cook for 5 minutes.
- Add the potatoes and cook until soft.
- Pour in the stock and bring to the boil, then simmer for 10 to 15 mins.
- Blend the soup and add salt and pepper.
- Add a spoon of single cream to each bowl.
